Prior to working with Katherine I thought I was eating all of the “right” foods; low-fat, low-carb, low- calories, but little did I know or understand the world of “processed food”. Katherine met with me and discussed my goals and explained how the food I was currently eating was not helping me achieve those goals.
She took the time to go through my kitchen cabinets and literally throw away the unhealthy processed foods. Once my cabinets were basically empty she then took me grocery shopping. What a FUN experience that was! She showed me how to introduce natural unprocessed food into my diet. With Katherine’s help I learned how to use food as fuel and a source of energy for my body. Through my experience with Katherine she has empowered me to make healthy lifestyle choices.
She is extremely educated and when it comes to food and how it works for our bodies her passion for it is exuberant. She has taught me to stop thinking about weight loss and rather focus on learning to change my life. Sure the weight loss naturally happened, but it was so much more than that. I sleep better at night, I’m not irritable, and I’ve got more energy all because of the food I’m choosing to put in my body!

After I stopped smoking, turned 30 and went from working in a scene shop to sitting behind a desk my food choices really caught up with me. Went from 6’ - 175lbs to 6’ - 260lbs in 10 years. I became the fat guy in the office. Wait how did that happen and what was I to do about it?
I tired looking at better healthier food options, but hated the taste of all of it. I have never liked eating fruits or vegetables. I’m a meat and potatoes kinda guy, well burgers and fries. I started working with Kat, she became my boss actually. She would come into the office with these strange looking concoctions in mason jars. Some looked like the slime used on kids TV or the worse parts of what babies leave in diapers. I was totally put off and amazed someone would consume that stuff.
As Kat and I became friends and talked about life, parenting, kids and of course those crazy smoothie things she was always drinking. The more we talked the more started to think about trying a version myself. As I talked to her it was about figuring out how to make it work for me. Never was it her telling me to do what she does in the way she does it, but was always about how it could work for me. I stated out with simple things I knew I would like. OJ, bananas, frozen strawberries and a couple pieces of spinach, like 5. I quickly realized that I could taste OJ, Banana and Strawberries, but not spinach. Tastes like an Orange Julius from the mall, I started adding more spinach each time. Soon I was going crazy, adding different fruits like Kiwi and various berries. Even crazier I started adding things like kale and carrots.
Fast-forward a couple years. I’m still eating burgers and fires, but I’m getting better food in me as well. I’m now using things like coconut water and various seeds and nuts in my smoothies; I even make some that have more vegetables than fruit. They still taste like Orange Julius from the mall!
I now think about the strange concoctions Kat would bring into the office every time a co-worker asks me what the hell is in that jar I'm holding. I think about how much better I feel and how adding Kat style smoothies into my diet has been one of the best health choices I have made since quitting smoking 13 years ago. Going on a diet is crap, you will always gain weight back but changing your life habits and you will never need to go on a diet, ever. Kat can help you do in a way that fits your life not try to fit you into her life.
